This salad is perfect for breakfast. It’s healthy, fresh and nutritious. I choose the egg in combination with various vitamins, in order to transform the beginning of the day in one full of energy.

Ingredients:

For salad:

  • 1 eggs
  • asparagus
  • 2 garlic cloves
  • 50 g butter
  • olive oil
  • salt
  • pepper
  • 1 coup of couscous
  • 1 coup of water
  • baby-spinach
  • pomegranate

For Dutch sauce:

  • 2 egg yolks
  • 50 g butter
  • salt
  • pepper

I started by washing and preparing the asparagus  (I held the asparagus with both hands and bent it so that it would break exactly where it should be). I put it in the pan where I heated the olive oil with the crushed garlic. I cooked it for a few minutes mixing it quite often so it would remain “al dente” (I didn’t put water / I didn’t boil it before).


Then I boiled the eggs in the water 2-3 minutes, so the yolk remained soft ( poached egg).
In the same time I boiled a glass of water and after boiling, I added salt and a spoon of olive oil, put the couscous over and left it for 5 minutes covered.

For the Dutch sauce I used 2 yolks at room temperature and I put them in the blender with salt and pepper over which I poured 50 g of hot melted butter.

I mixed the couscous for 10 seconds at full speed and then put a few drops of lemon juice.

Finally, I made a very tasty breakfast that helped me to start the day with a lot of energy.
