Eggplant, pepper and zucchini…. no, I don’t prepare a stew, I will prepare an autumn shrimp tartare with my favourite autumn vegetables.

Ingredients:

For tartare:

  • 1 small eggplant
  • 1 red pepper
  • 1 zucchini

For sauce:

  • 1 onion
  • 50 g butter
  • 7 shrimp
  • 50 ml cognac
  • salt
  • pepper
  • 1 tablespoon of ketchup
  • 1 tablespoon of mustard
  • 1 tablespoon of cream
  • 1 teaspoon of lemon juice

I took the eggplant, pepper and zucchini and baked them on grill.

Then, I started to prepare the sauce. First, I fried onion in 50 grams of butter for 2-3 minutes, I added the shrimp, salt, pepper and cooked for a few minutes. I added 50 ml of cognac and I left on fire for 2 minutes.

I transferred the mixture to blender and I pulsed for a few seconds at low speed. Thanks to the reversible blade system, which draws the ingredients in the bottom of the bowl, succeeding in mixing and mixing them quickly and efficiently, I obtained a very creamy sauce.

I added the ketchup, mustard, lemon juice and cream.

Cut the vegetables in small pieces (don’t mix them) and mix each vegetable with 1 teaspoon of sauce.
