Biscuits with oats, peanut butter and chocolate pieces are very nutritious and very easy to prepare. It’s perfect to include them in your breakfast or to serve them with milk or coffee.

Ingredients:

  • 70 g fine oats
  • 130 g flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla essence
  • 100 g white sugar
  • 100 g brown sugar
  • 100 g peanut butter
  • 1 egg
  • 200 g chocolate (small cubes)
  • 120 g butter
  • 60 ml water (optional, if the dough becomes sandy)

The secret of the special flavor of the biscuits is hidden in this first and important step. Frying the butter.

Melt the butter until it starts to boil and changes its color into a whiskey / caramel (do not insist on dark colors, because it burns). Once you’ve got the color you need, put it aside to cool down until you’re dealing with the other extremely complicated parts of the recipe. (you’ll feel that butter already smells of “biscuits” and please do not drink it from shot glass).

Mix the oat, flour, baking soda, baking powder and salt.

Separately, using the mixer, mix the fried butter with the whole amount of sugar and add vanilla, peanut butter and the egg.

Once homogenized, mix well the chocolate cubes.

To keep a biscuit specific symmetry, take from the mixture using a spoon and form some balls and place them on the baking paper, on the tray.

Place them in the oven at 170 degrees for 15-20 minutes, or until a golden crust formed (depending on their size). Do not flatten the balls because they will do it during baking. Leave big space between them. You will know if the biscuits are ready, depending on their color. They are soft when you remove them from the oven and they need 30 minutes – an hour to cool.

Crunchy outside, gummy inside, chocolate, sugar, peanut butter … they are just delicious!

  1. I have 2 small kids and I made them these biscuits for breakfast. Very fast, easy and healthy. As a full time mom is the best recipe to try because it takes very little time to prepare it. Thank you for this recipe!
