I like to use alcohol in recipes for a simple reason – melts and at the same time flavors the meat. Today I made some well-fried, crunchy chicken legs and drown them in a very good white wine sauce.

Ingredients:

  • 700 g chicken legs
  • olive oil
  • a little butter
  • 4-5 garlic cloves
  • 1 little onion
  • 500 ml white wine
  • 500 ml water
  • fresh thyme
  • 100 ml fatty cream
  • 1/2 teaspoon of starch

Firstly, I fried the legs (about 700 grams) in olive oil with a little butter, especially the skin, then I put them aside.

In a pan, pour the excess of fat remained from the fried chicken, without throwing the the left pieces of meat. Add 4-5 garlic cloves and a little onion and fry them.

I poured 500 ml of white wine that I boiled for two minutes, then added 500 ml of water, fresh thyme and I let everything to boil. Depending on the pot, the liquid should be lowered to allow the pieces of meat to remain outside.

I turned the meat on the other side into the pot, put the lid and put it in the oven at 180 degrees for 45 minutes with lid and 15 minutes without lid.

After I took it out of the oven, I took the meat on a platter (only temporarily) and put 100 ml of fatty cream in the sauce slowly, stirring continuously. It is advisable to let the sauce cool down a little. I cooked and I added ½ teaspoon of starch dissolved in a little water so that the sauce is joined. Starch was useful because I did not want the sauce to drop anymore, being quite concentrated. After being tied up, I turned off the fire and put a teaspoon of butter to make it more glossy and aromatic.

The chicken was delicious. It it very good for meals with many guests when the time is limited and also, looks very good and rustic on the table.
