There are a lot of recipes for cannoli with different types of cream. Today I will make a simple, fine and aromatic cream with mascarpone cheese.

Ingredients:

For crust:

  • 150 g flour
  • 60 g almond flour
  • 100 g butter
  • 1 tablespoon of powdered sugar
  • 2 eggs

For cream:

  • 200 grams of mascarpone cheese
  • 2 tablespoons of powdered sugar
  • a little vanilla
  • a handful of pistachio

For sauce:

  • 5 strawberries
  • 1 tablespoon of sugar
  • 1 teaspoon of flour

First, prepare the crust. I mixed the dry ingredients, then I incorporated the butter with my hands. I added the eggs and I kneaded for a while, then I put the dough in the refrigerator for 30 minutes in a plastic wrap.

After dough cooled, I put it in a 2 mm sheet and cut off ellipses using a glass.

I wrapped the disks in my improvised cannoli form and I cooked to medium to high heat  until they were lightly browned, about 10-12 minutes.

After they were baked, I let them cool before removing them from the mold.

I filled cannoli with a cream made of 200 grams of mascarpone cheese, mixed with 2 tablespoons of powdered sugar, a little vanilla, and a handful of fresh and crushed pistachio.

I filled the crusts and then I made a quick sweet- sour and very flavored sauce with some strawberries and a tablespoon of sugar. I made a strawberry purée, put them on fire with the sugar and let it cook for a few minutes. I strained the sauce, then I put it back on small fire, and I added a teaspoon of flour to thicken it a little.

This sauce fits perfectly with the cheese cream.
