Cheesecake is a very popular and delicious desert and you can find numerous delicious recipes. Today I will make an unconventional cheesecake, using cucumber.

Ingredients:

  • 1 pack of whole biscuits
  • 1 handful of nuts
  • 70 g butter
  • 4 large cucumbers
  • 2 tablespoons of honey
  • 1 tablespoon of fresh grated ginger
  • the juice from 1 lime
  • 1 pack of gelatine
  • 400 g mascarpone
  • 2 tablespoons of powdered sugar

First, I prepared a classical crust: smash the biscuits and the nuts and mix them with 70 g of melted butter.

I mixed well and pressed  the mixture on a 20 centimeter cake tray. I washed and peeled 4 large cucumbers.

Using a blender, I made them a puree and I added 2 tablespoons of honey, a tablespoon of fresh grated ginger and the juice from a lime.

I hydrated a pack of gelatine granules in cold water, then I dissolved it on a very small fire without boiling and put it over the cucumbers. Separately I put 400 grams of mascarpone, over which I added 2 tablespoons of powdered sugar.

I mixed very well until I obtained a cream, then I added the cucumber purée over. I poured the composition over the crust of biscuits and I put it in the freezer for 15 minutes, then moved the cheesecake in the refrigerator for at least 2 hours. It has a soft, fluffy texture and is very cool.
