I notice that, for various reasons, many people avoid to cook duck. This is why I decided to teach you a very easy and delicious way to cook Confit du Canard.

Ingredients:

For duck legs:

  • 2 duck legs
  • 2 bay leaves
  • thyme
  • pepper
  • 4 cloves of garlic
  • 200 ml sunflower oil (or olive oil)
  • 20 g butter

For side dish:

  • 1 onion
  • 2 cloves of garlic
  • 1/2 red cabbage
  • 2 tablespoons of brown sugar
  • 2 tablespoons of vinegar
  • 2 tablespoon of berries jam
  • 1 tablespoon of lemon juice
  • salt
  • pepper
  • 1 small glass of water

I took two duck legs, I cleaned them in the bone area with a knife and left them overnight in the fridge with salt (plenty), 2 bay leaves, thyme, pepper and crushed garlic. After I took them out of the refrigerator, I washed them (that’s why you should put more salt) and I drained them well.

In a small pot I put 200 ml of sunflower oil and 200 g butter and let the butter melt at very small heat, then I cleaned all the foam that has formed.

I put the legs to boil for 1 hour. Caution: the fire must be extremely small, they should not boil like in the pot with soup (the basic technique proposes that they should be left in the lard for 4 hours in the oven at low heat). They must also be fully covered. If the butter-oil mixture is not enough, add oil. Those who have endless reserves of olive oil can only use olive oil.

For cabbage, fry a finely chopped onion with 2 garlic cloves in olive oil. Add half of red cabbage finely cut and fry it until it starts to soften (gets glossy).

Add 2 tablespoons of brown sugar, 2 tablespoons of berries jam (or bitter cherries or what you have in your kitchen), 2 tablespoons of vinegar, 1 tablespoon of lemon juice, salt, pepper and a small glass of water. Boil the lid for 20 minutes (check from time to time).

This way of cooking duck makes it more crunchy, because of the butter. Sweet-sour red cabbage is spectacular in both ways: taste and color.
