This recipe is perfect to prepare it for breakfast. It’s healthy, easy to make and provides the necessary vitamins and nutrients for at least half of day.

Ingredients:

For pancakes:

  • a handful of spinach
  • 50 g butter
  • 2 eggs
  • 1 glass of milk
  • 150 g flour
  • 1 teaspoon baking powder

For sandwich:

  • 3 red peppers
  • 1 zucchini
  • 1 egg

For avocado sauce:

  • 2 avocados
  • juice from 1/2 lemon
  • 2 garlic cloves
  • hot pepper

First, start to prepare the spinach dough for pancakes. First, fry a bowl full of spinach in 50 grams of butter. Let it cook for a few minutes, then put the hot mixture into the glass bowl of your blender and made a puree, controlling the speed until you got the consistency and fine texture you need.

Separately, in a bowl, I beat two eggs, with a little salt and a glass of milk. Then I gradually added about 150 grams of flour and a teaspoon of baking powder, and then I put the finely mixed spinach puree.

I prepared a pan and cook the pancakes for about 3-4 minutes on each side, at low heat.

Heat the grill, cut 3 red peppers in two, place them on the grill and cook them. After peppers are cooked, transfer them in the blender bowl and make a fine puree.

Prepare an avocado paste in 2 minutes: peel and clean to avocados, add 2 cloves of garlic, the juice from 1/2 lemon, salt, and the surprise ingredient of this sandwich and hot pepper and mix them using the blender, until you obtain a fine paste.

Slice a zucchini and grill it for 5 minutes.

Finally, fry and egg and place it into the sandwich.
