Muffins are one of my favourite deserts and since I was a child I was looking in food magazines at muffins recipes and I promised I will cook such delicious recipes. This week I made a tray of dense, fluffy and light cheese muffins, soaked in berries syrup.

Ingredients:

For muffins:

  • 3 eggs
  • 250 gr of mascarpone cheese
  • 2 tablespoons of powdered sugar
  • 50 gr butter
  • 2 tablespoons of whole rice flour
  • 1 teaspoon of baking powder
  • vanilla essence

For berries syrup:

  • a handful of frozen berries
  • 1 teaspoon of rum
  • 1 tablespoon of sugar

For salty chocolate sauce:

  • 50 gr bitter chocolate
  • few drops of soy sauce

In bowl, put the eggs, sugar, cheese and vanilla. Mix very well using the vertical mixer, because is more powerful and you obtain a fluffy composition. Add the baking powder, butter and whole rice flour.

Using butter, grease the muffins mould and fill them 2/3. Bake at medium fire for 25 minutes.

After baking, I left them in the oven for 5 minutes after I closed the fire, then I took them out of mould and, until they cooled slightly, I prepared the syrup. I took a handful of frozen berries and put them on a small fire with a teaspoon of rum and a tablespoon of sugar.

Smash the berris using a fork and keep them on fire for another 5 minutes. Strain the berries and keep the syrup.

I dipped the muffins with using teaspoon, 2-3 time to make them tasty and juicy.

In addition to the syrup, I made a salty chocolate sauce, which fits perfectly with fresh-sour berries syrup. I melted 50 grams of bitter chocolate on the steam bath. I used Belgian chocolate with 70% cocoa to make the sauce taste like cocoa. After the chocolate has melted, I put a few drops of soy sauce and then I stirred vigorously until it became homogeneous and became a shiny sauce.

  1. The salty chocolate sauce was the best sauce for these muffins! Very glad that I discovered this sauce and I will use it for other simple deserts.
