When it comes to lamb, in my opinion there are two types of people: the ones who would eat lamb everyday and the ones who hate it. Today I will make everybody eat lamb because it’s cooked in a delicious way.

Ingredients:

For marinate:

  • 1 teaspoon of hot pepper
  • salt
  • thyme
  • 3 garlic cloves
  • red wine
  • juice from 1/2 lemon
  • 3-4 tablespoons of oil
  • 1 tablespoon of soy sauce
  • black pepper

For sauce:

  • 1 handful of basil leaves
  • 5 garlic cloves
  • juice from 1/2 lemon
  • salt
  • pepper
  • 4-5 fresh mint leaves
  • 2-3 tablespoons of olive oil

For puree:

  • 3 sweet potatoes
  • 2 bay leaves
  • 2 tablespoons of liquid cream
  • salt
  • pepper

For salad:

  • 1 green lettuce
  • 2 green onions
  • 2-3 radishes
  • a little dill
  • corn
  • 200 g of cheese

First of all, I prepared a marinade for chops: I mixed salt with 1 teaspoon of hot pepper, thyme, 3 garlic cloves, a little red wine, lemon juice, 3-4 tablespoons of oil, a tablespoon of soy sauce, and some black pepper. Enough for 8 chops, as I cooked. I grease the meat with this mixture and left it aside until I made the sauce.

I took a handful of basil leaves, smashed them quickly and I put them in ice water to keep their freshness. Then I transferred them to the mortar and added with the rest of the ingredients: 5 garlic cloves, juice from 1/2 lemon, salt, pepper, and 4-5 fresh mint leaves. After I crushed everything, I added 2-3 tablespoons of olive oil and mixed vigorously.

For puree, I boiled 3 large potatoes with 2 bay leaves. Then I crushed them with fork, seasoned with salt and pepper and mixed in the blender with 2 tablespoons of liquid cream.

Coming back to lamb chops, I fried them for 2 minutes on each side. Place the lamb in a slow cooker machine, or in the oven at low temperature, for 2 hours.

I prepared a fast salad with a green lettuce, 2 green onions, 2-3 radishes, a little dill, corn, 200 g of cheese.

As I expected, the lamb was juicy and tender, and of course, delicious.
