I was in a little excursion and all the time I wanted to eat meringue, so when I was back home I decided to make a delicious lemon meringue tart.

Ingredients:

For base:

  • 170 g whole biscuits
  • 70 gr butter

For meringue:

  • 3 egg whites
  • 120 g sugar

For lemon cream:

  • the juice and the grated peel from 2 lemons
  • 100 g sugar
  • 3 eggs
  • 70 g butter
  • 1 teaspoon of starch

First, smash the biscuits and mix them very well with the melted butter. Place the composition in a round form and put it in the refrigerator until you prepare the lemon cream.

For cream, beat the 3 eggs with the lemon juice and peel, add the sugar, butter and the dissolved starch and put the composition at medium fire, stirring from time to time.

After thickening, left it for 1 minute to boil. When it’s ready, pour it in the round shape over the biscuits and leave it in the freezer for 30 minutes (until it’s firm and no longer warm) – normally you should keep it in the fridge, but if you are in hurry you can keep it in the freezer.

Remove it from the round form and place it on a plate. To prepare the meringue, beat very very well the egg whites with sugar and place the obtained mixture over tart.

To finish the tart, bake it on the grill module at high temperature for a few minutes.
