I have always appreciated the Italian cuisine for its simplicity, but also the freshness of the ingredients used. Today I will cook a pasta carbonara recipe with spinach and pine buds.

Ingredients:

  • 500 g spaghetti (nr. 3)
  • 2 eggs
  • 6 egg yolks
  • 200 g bacon
  • 500 g baby spinach
  • 50 g pine buds
  • 1 cup of water
  • 1 tablespoon of butter
  • 100-150 g grated cheese or parmesan

Put the spaghetti to boil for 5 minutes, while you cut the bacon in small pieces and start to fry it until become very crispy.

Place the bacon on some napkins to remove the oil from it.

Fry the pine buds for 2-3 minutes until get a brown color and set them aside.

Start to prepare the sauce for pasta. Mix 2 eggs + 4 egg yolks + grated cheese. In a pan, melt a tablespoon of butter, add the spinach and fry it for  20-30 seconds until it become smaller. Then, add the boiled pasta and one cup of boiled water (from pasta), stirring on fire for 1-2 minutes. Turn off the fire and add the sauce, stirring continuously. I didn’t mixed the bacon and pine buds into pasta; I put them separately.
