In the kitchen I always like to test new combinations of flavours and this is how I obtained this amazing desert. Pear in vodka with coffee and chocolate mousse it’s an easy desert with an explosion of flavours.

Ingredients:

  • 1 pear

For vodka vapours:

  • 1500 ml water
  • 150 ml vodka
  • 4 lemon slices
  • 2 tablespoons of grated ginger

For mousse:

  • 150 ml of fresh prepared coffee
  • 50 g black chocolate
  • 100 ml of whipped cream
  • 2 tablespoons of powdered sugar

For crumble:

  • 1 handful of nuts
  • 1 tablespoon of lemon juice
  • honey

I started by preparing the steam bath, in which I will put the cleaned pear. In a bottle I put about 1500 ml of water, 150 ml of vodka, a few slices of lemon and a piece of fresh grated ginger. I put it to boil and I placed a grill on the top of the steam. I placed the pear on the grill.  From time to time I soak it in the vodka mixture.

The coffee and chocolate mousse was prepared using 150 ml of freshly prepared coffee, in which I melted 50 grams of black chocolate. Separately, I mixed 100 ml of whipped cream with 2 tablespoons of powdered sugar. Then I added the coffee mix and mixed well.

For added consistency I prepared a raw vegan crumble of nuts, honey and lemon juice. I crushed a handful of nuts, then I added the rest of the ingredients and mixed.

It’s ideal to eat it with the rest of the mousse that remains.
