Pork tenderloin is a delicious meat. Either baked, fried, in the tray, pan or grill, remains delicious. I like it so much because it is very tender and juicy. This week I put it on a plate of crispy pistachios, and yes, they fit perfectly.

Ingredients:

For meat:

  • a handful of pistachios
  • fresh thyme
  • 3 gloves of garlic
  • hot pepper
  • dry basil
  • 1 tablespoon of soy sauce
  • 1 tablespoon of tarragon dijon mustard
  • 1 piece of pork tenderloin

For side dish:

  • 3 potatoes
  • 3 tablespoon of soy sauce
  • salt
  • smoked pepper
  • 1 tablespoon of honey

For sauce:

  • 100 ml of liquid cream
  • 1 small cube of butter
  • 50 gr gorgonzola cheese
  • nutmeg powder

First I cleaned a handful of pistachios, I broke some small leaves of fresh thyme and put them in the mortar.

Next step is to put salt and to smash it very well.

Separately, I made a marinade of 3 cloves of crushed garlic, hot pepper, dry basil, soy sauce and a teaspoon of tarragon dijon mustard.

Mix very well until you obtain a creamy paste. Set aside the composition, for later.

Take the pork and roast it on a hot pan at high fire, until gets a little color.

Then I took it off and left it for 2 minutes. And then I started to grease it with marinade.

Cover it very well and wait few minutes. Then cover the pork with the pistachio mixture.

I put it in a tray on baking paper and put it in the oven at high temperature for 10 minutes. Meanwhile, I made a caramelized potato side dish for which I used 3 potatoes, salt, smoked pepper, soy sauce and a spoonful of honey.
First, cut the potatoes in small cubes, fried them in butter and add salt and pepper. Left them on the fire until they softened a little, set the fire to a higher temperature and then drop about three tablespoons of soy sauce. Evaporate out of the sauce, then put honey and leave them until they are nicely caramelized.

After the 10 minutes in oven, I took the pork out of the tray and let it rest for 5 minutes before cutting it, while I made a gorgonzola sauce, lighter.
I put about 100 milliliters of liquid cream on fire, over which I put a small cube of butter. After melting, I added 50 grams of gorgonzola cheese.

I left on a small fire for another 3-4 minutes, stirring constantly, until it reached a creamy consistency. At the end I put a nutmeg powder and I closed the fire.
I cut the pork in thick slices and licked my fingers. The crust remained crisp, slightly browned, and the juice very juicy.
