Pork tenderloin is my favorite part from pork because is very fragile. I decided to cook it with a side dish based on potatoes, with a fresh blueberries sauce.

Ingredients:

  • 1 big piece of pork tenderloin

For sauce:

  • 300 g blueberries
  • 2 cup of water
  • 1/2 cup of lemon juice
  • 1 tablespoon of sugar

For marinate:

  • 1 tablespoon of hot pepper
  • 1 tablespoon of oil
  • 3 garlic cloves,
  • 2 tablespoons of soy sauce
  • thyme

For side dish:

  • 5 potatoes
  • thyme
  • mushrooms
  • green onion

First, put enough salt on pork and then start to prepare the sauce.

For the sauce, I put 300 g of blueberries to boil in 2 cups of water, on low heat. When they started to boil, I put 1/2 cup of lemon juice and one tablespoon of sugar. I let it cook until it dropped, for about 15 minutes.

I put the potatoes to boil ( I didn’t peeled them) with 2 bay leaves, because I’m going to prepare the side dish; I will boil the potatoes partially as soon as the fork comes in.
Now I’m back to the pork. I made a marinade of a tablespoon of hot pepper, oil, garlic cloves, soy sauce and some thyme, which I will use immediately.

I heated a large pan with 2 tablespoons of oil and made a nice crust before to spice it.

When it became slightly golden, I warmed the oven at 180 degrees, spiced the pork very well and put it in the over for 10 minutes.

Meanwhile, I quickly made the side dish. I heated a pan with a cup of oil and put the potatoes almost cooked with some thyme and a little salt. When they got a golden color, I added a handful of sliced mushrooms and cooked for 5-7 minutes. At the end I added a minced very fresh green onion, for freshness.

Finally, slice the pork tenderloin and eat it with the side dish and sauce.
