This quiche recipe is great, because it’s fresh, contains very healthy ingredients and you can eat it in every moment of the day. You can also can take it with you at work or at school to eat it during the lunch break.

Ingredients:

For tart composition:

  • 1 kg of nettles
  • 70 g butter
  • 4 garlic cloves
  • 300 g of goat cheese
  • 4 eggs
  • 200 g of grated parmesan
  • 200 ml of fatty cream
  • 2 hands of cherry tomatoes
  • pepper
  • nutmeg

For tart dogh:

  • 125 g fat butter
  • 300 g flour
  • 1 egg yolk
  • 50 ml water

I put the nettles in  water, I removed their tails and washed them in 3 water to make sure they were well cleaned. Then I put a large pot of water on the fire with enough salt and when the water boiled I added the nettles, leaving them a few minutes. Then I took them out of the water and strained them well, leaving them aside.

For the tart dough I used the classic version: 125 g of fat butter (over 65%), 300 g of flour, 1 egg yolk and 50 ml of cold water. It is essential that ingredients to be cold. First, I incorporated the flour into butter and mixed with my hands, then I added the yolk, the water and mixed until I formed a ball and then I kept it in the fridge in plastic foil for 30 minutes. After it cooled down, I spread a dough directly on tray and baked it for 15 minutes.

While the tart was in the oven, I returned to nettles, which I fried them in 70g of butter and 4 garlic cloves until they became slightly creamy.

For the rest of the composition I used: 300 g of goat cheese, 4 eggs, 200 g of grated parmesan, 200 ml of fatty cream, 2 hands of cherry tomatoes, pepper and nutmeg. First I beat the eggs, then I incorporated the cream, the cheese and the parmesan and seasoned the composition with pepper and nutmeg. Finally, I added the nettles and tomatoes cut in half.

With this composition, I filled the tart dough and baked it to medium heat for about 20 minutes until it was slightly browned.

While is still warm, sprinkle a handful of parmesan, then leave it for 10-15 minutes before cutting it.
