During winter holidays it’s impossible to avoid the excess of food and because I have a lot of pork in the fridge I decided to use it and to prepare a delicious tortilla with bolognese sauce.

Ingredients:

  • 500 g pork
  • 1 teaspoon of hot chilli
  • salt
  • pepper

For sauce:

  • 2 onions
  • 1 large carrot
  • 4 cloves of garlic
  • 500 ml of tomato paste
  • 1 cup of water
  • 2 tablespoons of oil

For tortilla:

  • 2 cups of flour
  • 2 tablespoons of oil
  • 200 ml of water
  • 1 teaspoon of baking powder

Extra:

  • 1 handful of parsley
  • 2 tablespoons of corn grains
  • red hot pepper
  • cheddar cheese

Mince the meat and mix it with the condiments.

For sauce I used 2 onions, 1 large carrot, 4 cloves of garlic, all chopped, 500 ml of tomato paste, a cup of water and 2 tablespoons of oil. In the first phase I fried the garlic, then I added the rest of the vegetables, then the meat, leaving to cook for 5 minutes.

After the meat was cooked, I added the tomato paste together with the water and let it cook for about an hour. While the sauce was cooking, I started to prepare the tortillas.

I prepared 8 tortillas using: 2 cups of flour, 2 tablespoons of oil, 200 ml of water and a teaspoon of baking powder. First I mixed the flour with the baking powder, I added the water and the oil, put a little salt and I kneaded. Then I covered it and left it for about 20 minutes before I started to make tortillas.

After the 20 minutes, I formed equal balls, which I spread and baked them in the grill pan at high heat, about 1 minute on each side. Then I covered them.

For the tortillas, besides the bolognese sauce, I used a handful of parsley leaves, 2 tablespoons of corn and red hot pepper. Finally I added grinded cheddar cheese that melts in a few minutes if the sauce is warm.
