I’m going to introduce the method that in my opinion is the best way to cook some types of fish. My favorite is trout, a type of fish that many people run away, because has many bones.

Ingredients:

For fish:

  • 1 big fresh trout
  • 1 lemon
  • fennel seeds
  • pepper
  • 1 hot pepper
  • parsley
  • 1 kg salt
  • 3 egg whites
  • 50 ml of water

For side dish:

  • 3 sweet-sour peppers
  • olive oil

The cooking method is in salt crust. The method is simple. Take a big fresh trout (when you choose a fresh fish you should check the eyes – they must be clear and shiny) You eviscerate it and leave it scaly (if you take it without scales, as in my case it goes and so).
Place the slices of lemon, fennel seeds, pepper, slices of hot pepper and parsley in the belly, but not abundantly, because the belly has to close.

Mix 1 kg of salt with 3 egg whites and 50 ml of water. Consistency should be alike wet sand. Playing with the mixture is pretty therapeutic.

Then take a tray, put a baking paper and make a bed of the salt mixture on which the fish will sit, using less than half of the salt mixture. Put the fish and cover with the remaining salt. It has to be totally enclosed in salt crust.

You keep it in the oven at 200 degrees for 30 minutes.

Slowly break the salt crust with the back of a knife (or kitchen hammer) and get the fish from it.

Remove the peel and slowly take the meat using a tablespoon.

For side dish, I cut julienne 3 sweet-sour peppers and I fried them a little bit in with olive oil.

When peppers become soft, add 2 tablespoons of vinegar and 3 teaspoons of sugar, salt and pepper, and leave for 3-4 minutes on fire. This type of peppers fits very well with the fish.
