Because you can also prepare something delicious even it doesn’t contain meat, today I will present you a very tasty lasagna with vegetables.

Ingredients:

  • 2 onion
  • 3 carrots
  • 1/4 celery
  • 3 tablespoons of oil
  • thyme
  • rosemary
  • 3 garlic cloves
  • 2 zuchinni
  • 500 g mushrooms
  • 150 peppers
  • 1 glass of red wine
  • 350 ml tomatoes juice
  • 12 lasagna sheets

For ricotta:

  • 800 ml milk
  • 3 tablespoon of lemon juice
  • 350 g mozzarella
  • 1 handful of ricotta
  • 1 handful of basil

Chop ALL the vegetables: 2 large onions, 3 carrots and ¼ celery, chopped in very small pieces, eventually grated. I cooked them in 3 tablespoons of oil together with thyme, rosemary and 3 garlic cloves, and after they were soaked, I added zucchini and mushrooms. I mixed for 5-7 minutes, and I added the baked peppers. I put in vegetables a glass of red wine and I continued until a big part of liquid was evaporated. I seasoned with salt and pepper, I added 350ml of tomato sauce and left for 10-15 minutes to cook on low heat.

Meanwhile, the lasagna sheets were boiled for 8 minutes and then taken out on a towel. After that, I fried them for 2 minutes in an oil bath, but this step is optional.

I chose to prepare ricotta as follows: boil the milk and add 3 tablespoons of lemon juice, mix and leave aside for 5 minutes. For a more creamy ricotta, 1/4 of the milk quantity can be replaced with sweet cream. I put everything in gauze and left for 1 hour. I grated 350g of mozzarella, and half of it I mixed with a handful of basil and ricotta.

For my 28 x 20 tray I did the following: I put a quarter of the vegetable sauce, lasagna leaves, cheese mixture, a mozzarella rain, and repeated until I was left with nothing. After 15 minutes in the oven at 200 ° C it was ready to be eaten.
